Welcome to the Nutritional Values & Allergens course! 

This course shows you how to calculate and share the nutritional values of your recipes. This nutrition course will take you from the ground up—starting with applying nutritional values and relevant allergens to ingredients, going into your recipes, and generating FDA-approved nutrition labels. 

Who should take this course?
Anyone who needs to create or understand the nutritional values of your recipes will benefit from this course. This course is designed for your nutritionist or Culinary R&D team. 

Duration: ~20 mins

This course is broken up into four sections:

  1.  We will start by learning how to add nutritional values to your ingredients.
  2. Next, we will see how you can vary nutritional values by location through vendor items. 
  3. Then, we will learn how those values feed into your recipes. 
  4. Finally, we will demonstrate how to generate nutrition labels

When should I take this course?
Nutrition relies heavily on accurate recipes, so you should take this course when all of your recipe data is ready to go in Galley. 

We’ll cover:

  • Where you find nutritional information in Galley
  • How to pull in nutritional information from the USDA database
  • How to customize your ingredient & vendor item’s nutritional information
  • How to add allergens or dietary flags to an ingredients & vendor items
  • How to account for premade ingredients
  • What external ingredient names are
  • How to adjust nutrition contribution %
  • How to create a nutrition label
